FOULAGE bracelet

The crushing (foulage) is the first operation which begins the vinification. Bare foot or mechanically, the purpose is to burst the skin of the grapes to extract the juice. After crush, the focus shifts from farm to chemistry. It’s time to monitor and test the fermentation, clarification and maturation until the “mise en bouteille”
